Industrial mass production is not suitable because the number of seasoning types is large but demand of each type is limited.

Soy sauce is a condiment with a broad group of customers and few subdivisions, and it can be produced with large-scale industrial equipment. Different from such traditional condiments, many subdivided pre-made seasonings have various customer group and further demand of “secret recipes”. Thus, the research and development of pre-made seasoning require much workforce to invest time and energy.

Largely dependent on chefs causing low standardization and high human costs.

In the absence of industrial mass production, chefs need to take the burden. Nestle had to hire many skilled chefs with high salaries to support production. Though automatic equipment has been introduced into production, it only reduces the manual pressure of flipping ingredients during the stir-fry process. The core standardization has yet to be guaranteed.
